Here are some main course meals which I plan to try out this week for my recovery days from testing fructans in the low-FODMAP diet. Unfortunately wheat bread did not sit well with my stomach -- but knowing that information will help me feel better in the long run.
I use a kitchen scale to weigh serving sizes according to the Monash University App. Please use your own judgement when choosing ingredients and serving sizes.
Low FODMAP Chicken Satay Stir-Fry with Rice Noodles - ?? stars
I plan to use fresh local vegetables grown by Fermes Lufa in their factory-roof greenhouses. Yay for fresh local greens in the middle of winter!

Maple-Soy Glazed Salmon - 5 stars
This recipe works well on the low-FODMAP diet if I just omit the garlic. I have cooked it before and everybody really loves it, including my toddler. I will serve it with basmati rice, steamed carrots and slices of cucumber.

Low FODMAP Pastry-Less Quiche - ?? stars
The Bulk Barn at Marché Centrale in Montréal is one of several doing a pilot program for "zéro déchets" which means I brought my own containers to stock up on gluten-free flour (I use the 1-à-1 mélange patisserie) and quinoa pasta (see next recipe). Going to try the bacon & chive version of this quiche recipe and sub almond milk for the lactose-free milk.

Green Pesto Pasta - 5 stars
My six-year old niece who won't eat greens couldn't get enough of this pasta dish. I didn't tell her how much spinach was hidden in the sauce! I usually add a big handful of fresh basil leaves to the pesto, and cook the bacon up with some cherry tomatoes as a side dish. The pesto pasta is also nice as a side dish with fish. I am hoping to feel well enough by the end of the week to try wheat pasta as part of testing whether I tolerate fructans.
