Apparently I have a sweet tooth today! Here are two recipes I have already tried and liked, plus a few links to recipes that I don't want to lose track of before I get the chance to try them.
Chewy Peanut Butter Cookies - 4 stars
This one was a big hit with my toddler, whose favourite word these days is "coooooooo-kie!" They are a bit crumblier than my standard (gluten-containing) cookies but not too sweet and quite tasty.

Gluten-Free Chocolate Chip Oatmeal Cookies
I am planning to do some baking this afternoon, and so far I am having good luck with the gluten-free recipes on King Arthur Flour's website. King Arthur gluten-free blend is not available in Canada as far as I know. I usually substitute the 1-to-1 gluten-free baking mix (which contains all low-FODMAP flours and starches, to the best of my knowledge) found at Bulk Barn.

Almond Thumbprint Cookies
Apparently "the ones with the jam in the middle" were my favourite cookies as a kid. I'm not sure anything will ever replace my grandmother's thumbprint cookies but I've got a jar of homemade strawberry-rhubarb jam that will go a long way to making these tasty.

Gluten-Free Chocolate Birthday Cake - 5 stars
My father's rules for birthdays include having a chocolate cake with chocolate icing and raspberry jam (homemade) between the layers. I have tried a lot of chocolate cake recipes over the years, and I have to say that this one really is as delicious as a "real" (non gluten-free) cake. I substituted almond milk to make it dairy-free.

Gluten-Free Blondies
The America's Test Kitchen gluten-free flour blend contains skim milk powder as a key ingredient, so I am not sure how well these will work without milk. Please let me know if you try them.

All FODMAP sites come with the caveat that this program is designed to be undertaken with the guidance of a FODMAP-trained dietician - so here is mine. I am not a dietician or a doctor, and none of the information on this blog is intended to replace qualified medical advice. My goal is to have a place to share and record some of my low-FODMAP cooking successes and collate some resources which are useful in my own low-FODMAP diet adventure.
