Low-FODMAP fish main courses

My husband makes fish every Friday for dinner so I need to be careful about where I put it in my part of the week. Here are a couple of low-FODMAP goodies. Creamy Dijon-Dill Salmon Mayonnaise plus lemon juice plus other good things makes a really nice marinade for all kinds of fish baked in the oven. Comes out moist and delicious. I sometimes cook bacon bits for the top of the soup, take out the meat and use the fat to start the soup. Start by frying up chopped swiss chard stems in butter or bacon fat as if it was onion or celery. Fresh thyme is good at this point. Add some diced potatoes and carrots and some chicken broth. Some low-FODMAP chicken dishes to try

I have some delicious chicken thighs from local Ferme Rose-des-vents (via my panier Lufa) for dinner tomorrow night. What shall I make? Chicken Dijon Wonder if my nearly two-year-old toddler will like the taste of Dijon mustard? Good Food main courses to try

My new favourite podcast, The West Wing Weekly , is sponsored by Blue Apron. I recently discovered a Canadian equivalent: Good Food (based in Montreal!). Unfortunately a lot of high-FODMAP (but delicious) ingredients are featured in their food boxes, but they do post recipes online which means I can adapt the list of ingredients to omit the foods that cause me digestive troubles. Here are a few main courses which look delicous and could be modified to be low-FODMAP without changing the recipe too much. We had the shrimp (with green beans in place of snow peas and omitting the garlic and white parts of scallions) last week. I might try it next time with tofu becaise my toddler isn't a fan of shrimp. Low-FODMAP Main Courses, Part 2

Here are some main course meals which I plan to try out this week for my recovery days from testing fructans in the low-FODMAP diet. Unfortunately wheat bread did not sit well with my stomach -- but knowing that information will help me feel better in the long run. I use a kitchen scale to weigh serving sizes according to the Monash University App. Please use your own judgement when choosing ingredients and serving sizes. Low FODMAP Chicken Satay Stir-Fry with Rice Noodles - ?? stars I plan to use fresh local vegetables grown by Fermes Lufa in their factory-roof greenhouses. Low-FODMAP Treats, part 3

Apparently I have a sweet tooth today! Here are two recipes I have already tried and liked, plus a few links to recipes that I don't want to lose track of before I get the chance to try them. Chewy Peanut Butter Cookies  - 4 stars This one was a big hit with my toddler, whose favourite word these days is "coooooooo-kie!" King Arthur gluten-free blend is not available in Canada as far as I know. Nuts, according to the Monash University app, are low-FODMAP in small serving quantities. I am learning to use them as a flour substitute in baking. Here are two really yummy treats which we have enjoyed very much and my belly has tolerated as well. Chewy Peanut Butter Cookies (gluten-free and low FODMAP) - 4 stars http://blog.katescarlata.com/2015/08/20/chewy-peanut-butter-cookies/ My toddler loves these! I think that next time I will add a pinch of salt. For me it made 28 smaller cookies (I rolled 1" balls and squashed them with a fork). Not too sweet and very tender. Be sure to let them cool before removing them from the cookie sheet.
