I sometimes cook bacon bits for the top of the soup, take out the meat and use the fat to start the soup. Start by frying up chopped swiss chard stems in butter or bacon fat as if it was onion or celery. Fresh thyme is good at this point. Add some diced potatoes and carrots and some chicken broth.
